Carbonade Flamande

Juicy and delicious, carbonade Flamande taste heavenly and you can serve it with fresh spinach salad and warm bread or boiled rice.

Ingredients (4-5 servings)

2 lbs. beef meat, Kaldereta cubes

1 teaspoon salt

1 teaspoon pepper

½ cup flour

1 tablespoon unsalted butter

1 whole white onion, chopped

2 tablespoons tomato paste

1 dried bay leaf

2 teaspoon dried thyme

2 bottles Belgian cherry beer

1 tablespoon light brown sugar

2 teaspoon Dijon mustard

3 tablespoons olive oil

Preparation

Black pepper and salt the Kaldereta cubes. Each piece of meat has to be coated after adding flour. Olive oil has to be put into a pot on medium heat. Add the meat and fry it until it's browned all over. Sauté chopped the onion in butter until aromatic and transparent in the same pot. Add the seared pork, dried thyme, dried bay leaf, and tomato paste.

Pour 2 bottles of Belgian cherry beer. Cook for almost 45 minutes. over low heat with the lid on the pot. Season the stew with black pepper and salt and add the light brown sugar and Dijon mustard. Continue to simmer for almost 20 more minutes. Serve hot with baguette or fries.
